Pour ma part, j\u2019utilise des <strong>cocottes en fonte<\/strong>, et plus particuli\u00e8rement celles de la marque Le Creuset\u00ae. Certaines prot\u00e9ines coagulent, certaines structures se figent, et surtout, il y a un ph\u00e9nom\u00e8ne essentiel : <strong>l\u2019\u00e9vaporation de l\u2019eau<\/strong>.<\/p>\n<p>Dans un p\u00e2ton, l\u2019eau est pr\u00e9sente telle quelle ou via certains ingr\u00e9dients comme le lait, les \u0153ufs ou le beurre. Lorsqu\u2019elle atteint son <strong>point d\u2019\u00e9bullition<\/strong>, elle se transforme en <strong>vapeur<\/strong>.<\/p>\n<ul>\n<li><strong>Dans un four classique<\/strong>, cette vapeur s\u2019\u00e9chappe dans la chambre du four.<\/li>\n<li><strong>Dans une cocotte<\/strong>, elle reste pi\u00e9g\u00e9e sous le couvercle et cr\u00e9e une <strong>atmosph\u00e8re tr\u00e8s humide<\/strong>, id\u00e9ale pour favoriser le d\u00e9veloppement du pain.<\/li>\n<\/ul>\n<p>Cette humidit\u00e9 permet :<\/p>\n<ol>\n<li>Une bonne <strong>r\u00e9partition uniforme de la chaleur<\/strong>,<\/li>\n<li>Une <strong>cro\u00fbte particuli\u00e8rement croustillante<\/strong>,<\/li>\n<li>Une <strong>mie tr\u00e8s alv\u00e9ol\u00e9e<\/strong>, gr\u00e2ce \u00e0 une cro\u00fbte qui se fige moins vite.<\/li>\n<\/ol>\n<p>En somme, la cocotte reproduit parfaitement l\u2019effet des <strong>fours vapeurs<\/strong>, qui maintiennent une humidit\u00e9 \u00e9lev\u00e9e durant la cuisson afin de favoriser le d\u00e9veloppement du pain.<\/p>\n<p>[\/et_pb_text][et_pb_text _builder_version=\u00a0\u00bb4.27.4&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb custom_padding=\u00a0\u00bb||4px|||\u00a0\u00bb global_colors_info=\u00a0\u00bb{}\u00a0\u00bb theme_builder_area=\u00a0\u00bbpost_content\u00a0\u00bb]<\/p>\n<h2 class=\"wp-block-heading\"><strong>Quelle cocotte choisir ?<\/strong><\/h2>\n<p>Comme je le disais dans l\u2019introduction, j\u2019ai une pr\u00e9f\u00e9rence nette pour les <strong>cocottes en fonte<\/strong>, qui pr\u00e9sentent l\u2019avantage de ne pas casser.<\/p>\n<p><strong>Pourquoi je choisis les cocottes en fonte ?<\/strong><\/p>\n<ul>\n<li>Excellente r\u00e9partition de la chaleur<\/li>\n<li>Grande inertie thermique<\/li>\n<li>R\u00e9sistance aux hautes temp\u00e9ratures<\/li>\n<li>Robustesse et durabilit\u00e9<\/li>\n<li>Elles peuvent \u00eatre utilis\u00e9es pour la pr\u00e9paration de tous vos plats mijot\u00e9s et autres<\/li>\n<\/ul>\n<p><strong>Qu\u2019en est-il des cocottes en terre cuite ?<\/strong><\/p>\n<p>Il existe \u00e9galement des cocottes en terre cuite, comme celles propos\u00e9es par \u00c9mile Henry\u00ae, qui peuvent parfaitement \u00eatre utilis\u00e9es pour la cuisson du pain.<\/p>\n<p>[\/et_pb_text][et_pb_text _builder_version=\u00a0\u00bb4.27.4&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb global_colors_info=\u00a0\u00bb{}\u00a0\u00bb theme_builder_area=\u00a0\u00bbpost_content\u00a0\u00bb]<\/p>\n<h2><strong>Comment cuire votre pain en cocotte?<\/strong><\/h2>\n<p>Commencez par r\u00e9aliser votre p\u00e2te \u00e0 pain de mani\u00e8re habituelle, puis effectuez la <strong>premi\u00e8re lev\u00e9e<\/strong> et <strong>fa\u00e7onnez vos pains<\/strong>.<br \/>Ensuite, deux m\u00e9thodes s\u2019offrent \u00e0 vous.<\/p>\n<p><strong>M\u00e9thode 1 : Deuxi\u00e8me lev\u00e9e dans la cocotte<\/strong><\/p>\n<ol>\n<li>A la fin de la premi\u00e8re lev\u00e9e, d\u00e9gazez votre p\u00e2ton et fa\u00e7onnez votre pain.<br \/>D\u00e9posez-le ensuite dans la cocotte et refermez la cocotte avec son couvercle.<\/li>\n<li>R\u00e9alisez la <strong>seconde lev\u00e9e<\/strong>.<\/li>\n<li>Enfournez la cocotte dans le four pr\u00e9chauff\u00e9 \u00e0 240\u00b0C.<\/li>\n<li><strong>Cuisez \u00e0 240\u00b0C pour les pains sal\u00e9s durant les 15 premi\u00e8res minutes<\/strong>, ou <strong>220\u00b0C pour les pains sucr\u00e9s<\/strong>.<br \/>Puis poursuivez la cuisson \u00e0 <strong>220\u00b0C<\/strong> (pains sal\u00e9s) ou <strong>200\u00b0C<\/strong> (pains sucr\u00e9s).<\/li>\n<\/ol>\n<p><strong>M\u00e9thode 2 : Avec pr\u00e9chauffage de la cocotte<\/strong><\/p>\n<ol>\n<li>Quinze minutes avant la fin de la premi\u00e8re lev\u00e9e, placez votre cocotte vide dans le four et <strong>faites chauffer \u00e0 240\u00b0C<\/strong>.<\/li>\n<li>\u00c0 l\u2019issue de la premi\u00e8re lev\u00e9e, et apr\u00e8s avoir fa\u00e7onn\u00e9 votre pain, sortez la cocotte du four avec pr\u00e9caution. <strong>D\u00e9posez prudemment votre p\u00e2ton dans la cocotte chaude<\/strong>.<\/li>\n<li>Fermez imm\u00e9diatement avec le couvercle.<\/li>\n<li><strong>Cuisez \u00e0 240\u00b0C pendant les 15 premi\u00e8res minutes<\/strong>, ou <strong>220\u00b0C pour les pains sucr\u00e9s<\/strong>.<br \/>Puis poursuivez la cuisson \u00e0 <strong>220\u00b0C<\/strong> (pains sal\u00e9s) ou <strong>200\u00b0C<\/strong> (pains sucr\u00e9s).<\/li>\n<\/ol>\n<p><em>Cette m\u00e9thode ne demande <strong>pas de deuxi\u00e8me lev\u00e9e dans la cocotte<\/strong> : vous enfournez juste apr\u00e8s la fin de votre deuxi\u00e8me lev\u00e9e sur le plan de travail.<\/em><\/p>\n<p>[\/et_pb_text][et_pb_text _builder_version=\u00a0\u00bb4.27.4&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb global_colors_info=\u00a0\u00bb{}\u00a0\u00bb theme_builder_area=\u00a0\u00bbpost_content\u00a0\u00bb]<\/p>\n<h2 class=\"wp-block-heading\"><strong>Temps de cuisson et astuces<\/strong><\/h2>\n<ul>\n<li>J\u2019utilise du <strong>papier cuisson<\/strong> pour \u00e9viter que le pain adh\u00e8re \u00e0 la cocotte.<\/li>\n<li>Les <strong>pains sucr\u00e9s<\/strong> peuvent \u00e9galement \u00eatre cuits en cocotte : baissez simplement la temp\u00e9rature de <strong>20\u00b0C<\/strong> par rapport aux pains sal\u00e9s.<\/li>\n<li>J\u2019utilise le mode \u00ab <strong>chaleur tournante<\/strong> \u00bb afin d\u2019avoir une r\u00e9partition homog\u00e8ne de la temp\u00e9rature dans le four.<\/li>\n<li>La dur\u00e9e de cuisson est g\u00e9n\u00e9ralement <strong>plus importante de 50%<\/strong> en cocotte.<br \/>Ex.\u00a0: Un pain qui cuit 35 min sans cocotte \u2192 environ<\/li>\n<li>Je retire toujours le <strong>couvercle sur le dernier tiers<\/strong> de la cuisson afin de saisir la cro\u00fbte.<\/li>\n<\/ul>\n<ul><\/ul>\n<p><strong>R\u00e9sultat ?<\/strong> Une cro\u00fbte g\u00e9n\u00e9reuse qui craque, une mie alv\u00e9ol\u00e9e, et un parfum incomparable.<\/p>\n<p>[\/et_pb_text][et_pb_text _builder_version=\u00a0\u00bb4.27.4&Prime;
