Les<span>\u00a0<\/span><strong>enzymes<\/strong><span>\u00a0<\/span>sont des prot\u00e9ines pr\u00e9sentes dans notre corps et dans les organismes vivants. Elles facilitent certaines r\u00e9actions chimiques dans le monde de l\u2019infiniment petit : parfois, elles servent \u00e0 transformer, \u00e0 coller ou \u00e0 couper diff\u00e9rentes mol\u00e9cules.<\/p>\n<p>Dans le cas des fruits, lorsque la chair est expos\u00e9e \u00e0 l\u2019air apr\u00e8s avoir \u00e9t\u00e9 coup\u00e9e, l\u2019enzyme PPO catalyse<strong><span>\u00a0<\/span><\/strong>(c\u2019est-\u00e0-dire favorise) une r\u00e9action chimique. Elle transforme certaines mol\u00e9cules appel\u00e9es compos\u00e9s ph\u00e9noliques, naturellement pr\u00e9sentes dans le fruit, en quinones. Ces quinones sont instables et r\u00e9agissent entre elles pour former des pigments bruns appel\u00e9s<span>\u00a0<\/span><strong>m\u00e9lanines<\/strong><span>\u00a0<\/span>(de la m\u00eame famille que la m\u00e9lanine qui colore notre peau lorsqu\u2019elle bronze au soleil).<\/p>\n<p>C\u2019est ce processus qui provoque le changement de couleur des fruits comme la pomme, la poire, la banane ou encore l\u2019avocat.<\/p>\n<p>[\/et_pb_text][et_pb_text _builder_version=\u00a0\u00bb4.27.4&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb global_colors_info=\u00a0\u00bb{}\u00a0\u00bb]<\/p>\n<h2 class=\"wp-block-heading\"><strong>Comment le jus de citron agit-il ?<\/strong><\/h2>\n<p>Le jus de citron intervient de deux mani\u00e8res pour ralentir ce brunissement :<\/p>\n<ol start=\"1\" class=\"wp-block-list\">\n<li><strong>Par son acidit\u00e9 (pH bas)<\/strong><span>\u00a0<\/span>: l\u2019enzyme PPO fonctionne beaucoup moins bien en milieu acide. L\u2019ajout de jus de citron emp\u00eache donc la formation de ces pigments bruns.<\/li>\n<li><strong>Par sa richesse en vitamine C (acide ascorbique)<\/strong><span>\u00a0<\/span>: cette mol\u00e9cule agit directement sur les pigments bruns d\u00e9j\u00e0 form\u00e9s, en les transformant et en emp\u00eachant leur accumulation.
