Aujourd\u2019hui, je vous propose une version revisit\u00e9e du traditionnel pain d\u2019\u00e9pices : moelleux gr\u00e2ce au lait battu, boost\u00e9 en fibres avec le son d\u2019avoine, et twist\u00e9 par les cranberries acidul\u00e9es et les graines croquantes.<\/p>\n<p>Ce pain d\u2019\u00e9pices est un bel exemple de ce que j\u2019aime appeler la cuisine<strong><span>\u00a0<\/span>\u201cGood and Healthy\u201d<\/strong><span>\u00a0<\/span>: du plaisir, du go\u00fbt, et des ingr\u00e9dients qui font du bien \u00e0 notre corps. Le lait battu apporte une fermentation douce, int\u00e9ressante pour la digestion. Les graines de courge regorgent de min\u00e9raux (zinc, magn\u00e9sium, calcium), tandis que les cranberries apportent leurs antioxydants. Saupoudrez g\u00e9n\u00e9reusement le dessus de graines de s\u00e9same.<\/li>\n<li>Faites cuire au four 1h30 \u00e0 175\u00b0C (chaleur vo\u00fbte et sole). Laissez bien refroidir avant de d\u00e9mouler.<\/li>\n<\/ol>\n<p>[\/et_pb_text][et_pb_text _builder_version=\u00a0\u00bb4.27.4&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb global_colors_info=\u00a0\u00bb{}\u00a0\u00bb]<\/p>\n<h2 class=\"wp-block-heading\">Une pinc\u00e9e de science<\/h2>\n<h3 class=\"wp-block-heading\">Jouer avec les farines<\/h3>\n<p>Dans cette recette, j\u2019ai pr\u00e9f\u00e9r\u00e9 une combinaison : farine pour p\u00e2tisserie + son d\u2019avoine + f\u00e9cule de pomme de terre plut\u00f4t que la farine seule.<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Nutritionnel<\/strong><span>\u00a0<\/span>: le son d\u2019avoine apporte des fibres solubles (b\u00eata-glucanes) qui ralentissent l\u2019absorption des sucres et favorisent une meilleure sati\u00e9t\u00e9. En d\u2019autres termes, elles contribuent \u00e0 limiter le fameux \u201ccoup de pompe\u201d post-g\u00e2teau.<\/li>\n<li><strong>Texture<\/strong><span>\u00a0<\/span>: la f\u00e9cule, tr\u00e8s fine et sans gluten, all\u00e8ge la p\u00e2te en lui donnant du moelleux et de la souplesse. Elle compense le c\u00f4t\u00e9 plus dense qu\u2019apportent les fibres.<\/li>\n<li><strong>\u00c9quilibre parfait<\/strong><span>\u00a0<\/span>: on obtient ainsi un pain d\u2019\u00e9pices qui reste gourmand et a\u00e9rien tout en \u00e9tant plus int\u00e9ressant d\u2019un point de vue nutritionnel qu\u2019un g\u00e2teau r\u00e9alis\u00e9 uniquement avec de la farine blanche raffin\u00e9e.<\/li>\n<\/ul>\n<p>[\/et_pb_text][et_pb_text _builder_version=\u00a0\u00bb4.27.4&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb global_colors_info=\u00a0\u00bb{}\u00a0\u00bb]<\/p>\n<h3 class=\"wp-block-heading\">Le miel versus le sucre<\/h3>\n<p>Pourquoi ai-je choisi le miel plut\u00f4t que du sucre raffin\u00e9 dans ce pain d\u2019\u00e9pices ? La r\u00e9ponse est autant gustative que scientifique.<\/p>\n<p>Le miel est un sucre naturel, compos\u00e9 principalement de fructose et de glucose. Contrairement au sucre blanc, qui est un saccharose pur, le miel contient \u00e9galement des enzymes, des min\u00e9raux (potassium, calcium, magn\u00e9sium), des vitamines en petites quantit\u00e9s et surtout des compos\u00e9s antioxydants.<\/p>\n<p>Sur le plan de l\u2019<strong>indice glyc\u00e9mique (IG)<\/strong>, le miel reste g\u00e9n\u00e9ralement plus bas que celui du sucre blanc (IG moyen de 50 \u00e0 65 pour le miel, contre environ 70 pour le sucre). Cela signifie qu\u2019il provoque une \u00e9l\u00e9vation de la glyc\u00e9mie plus progressive, ce qui \u00e9vite les pics et les chutes brutales d\u2019\u00e9nergie.<\/p>\n<p>En p\u00e2tisserie, le miel a un autre avantage : sa richesse en fructose retient l\u2019humidit\u00e9 et contribue \u00e0 un<span>\u00a0<\/span><strong>moelleux durable<\/strong>.
